Choc-Banana Bread

Difficulty: Beginner

Description

For everyone who thinks they don’t like banana bread — this one might just change your mind. It’s rich, moist, and perfectly chocolaty. Ridiculously easy to make and perfect for tea time, kids’ lunch boxes, or whenever those ripe bananas start calling your name.

Ingredients

Instructions

  1. 1. Preheat your oven to 165°C. Grease your pan
  2. In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk together the olive oil, brown sugar, and granulated sugar until combined and slightly thickened — about 1 minute of vigorous whisking.
  4. Add the mashed bananas, eggs, Greek yogurt, and vanilla extract. Whisk until smooth and fully combined.
  5. Fold in the melted chocolate gently until evenly incorporated.
  6. Add the dry ingredients to the wet mixture and fold until just combined. Gently fold in the mini chocolate chips if using
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Cool completely in the pan before removing. Store at room temperature in an airtight container for up to 3 days, or refrigerate for up to 1 week.
