This is one of my forever favourites and close to my heart—my grandma’s recipe. A tiny little donut, it’s quick to make and ready in under 20 minutes whenever you need something sweet.

In a large bowl, whisk together the flour, baking powder, sugar, and salt.

In a separate bowl, mix the egg, yogurt, vanilla, and rakija (or rum) until well combined.

Pour the wet ingredients into the dry and whisk until the batter is smooth and lump-free. Don't over mix it. Grate in the lemon zest and stir through. At this stage, you can also fold in extras like finely diced apples, sultanas, or chocolate chips.

Heat oil in a deep frying pan to 170–175°C (340–350°F). There should be at least 2 cm of oil to allow the fritille to float and cook evenly.

To shape the fritille, you have a few options:

Spoon method: Use two spoons to gently scoop and drop small portions of batter into the hot oil.

Hand method: Lightly oil your hands and roll the batter into small balls before carefully placing them into the oil.

Piping method: Transfer the batter to a large piping bag and snip a 1 cm opening at the tip. Hold the bag over the hot oil and, using kitchen scissors, snip the batter as you squeeze, letting the small rounds drop straight into the oil—this technique gives the most uniform, perfectly round fritille.

Fry in batches, adjusting the heat if needed. If the oil is too hot, the fritille will brown too quickly on the outside while staying raw in the centre.

Once golden and cooked through, transfer to paper towels to drain. Serve warm, dusted with icing sugar or drizzled with melted chocolate.
