Description

This rustic yeast bread is my go-to when I have a little time at home. It’s simple, with no need for fancy equipment or hours of kneading—just a few stretch-and-folds, some resting, and you’ll end up with the most amazing crumb.

  1. 1. Mix dry ingredients:
  2. In a large bowl, combine flours and salt.
  3. 2. Activate yeast:
  4. Make a well in the center. Add warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
  5. 3. Combine:
  6. Mix to form a wet, shaggy dough. Don’t worry—it’s meant to be sticky.
  7. 4. Rest:
  8. Cover with a damp tea towel and rest for 15 minutes.
  9. 5. Stretch & fold:
  10. Do your first stretch and fold. Rest again for 15 minutes. Repeat 2–3 times by using coil fold method (like in a video) Dough should feel stronger.
  11. 6. Shape:
  12. Turn dough out, gently stretch into a rectangle, fold like a letter, then fold into a tight loaf.
  13. 7. Prepare basket:
  14. Line a basket with a floured tea towel. Place loaf seam-side up and pinch top to create surface tension.
  15. 8. Proof:
  16. Cover and proof at room temp for 30 minutes or until nearly doubled.
  17. 9. Preheat oven:
  18. Heat oven to 250°C with a cast iron pot inside.
  19. 10. Bake:
  20. Add dough to hot pot, score the top, and bake covered for 25 minutes. Then uncover, reduce temp to 220°C, and bake another 10–15 minutes.
  21. 11. Cool:
  22. Let cool for at least 30 minutes before slicing.
