Growing up in Croatia, this was one of our favourite dishes on hot summer nights. Mom would whip it up in no time, and we’d all gather around with crusty bread to soak up every bit. Just a handful of ingredients; tomato, garlic, and white wine coming together to make something so fragrant and delicious. Proof that simple is always best.

Description

With just a few simple ingredients—garlic, tomato, parsley, and plenty of good olive oil—you can create a dish that’s absolutely delicious. It’s the sauce, rich and full of flavour, that really makes it special.

Instructions

  1. Clean and de-beard mussels.
  2. Chop garlic, parsley, and tomatoes (have everything ready as cooking goes fast).
  3. Heat a large pan, add half the olive oil.
  4. Add garlic, let it sizzle briefly.
  5. Pour in white wine to deglaze; let it reduce slightly.
  6. Add tomatoes, season lightly with salt, and cook ~5 minutes until softened and thickened.
  7. Toss in mussels, cover with a lid, and steam ~5 minutes or until mussels open.
  8. Finish with rest of the Olive oil, lots of fresh parsley and lemon slices.

  9. Squeeze over lemon juice and serve with crusty bread.
